These are some beautiful 18 carat Italian cuffs I photographed before Christmas. This client and I have tried all sorts of elaborate sets, but it's always the simple sets that get picked for ads and marketing material. Same thing at Hallmark. I would try all these sets with tons of stuff that took me hours to put together, but in the end, portfolio pieces came from photos with the simple, but well-thought-out sets.
So remember that when you enter Phase 3 & 4. Simple Sells! Don't overthink it! Don't go crazy with props and sets.
This was just the client's curtains in her store. A softbox main, high and to the right, an umbrella fill, and a small silver reflector. 5D with the 24-70. (My macro is coming in next week!!) Jewelry is a real speciality, and you need a lot of gear and patience, but I only do jewelry 6-10 times a year...so I make it work with what I've got!

Also students be sure to start creating images that you can use to sell yourself when you get out.
Really think about the target audience that you want to go after and use this time you have to create the images you need for marketing yourself.
Pretend your in business now and use the assignments you're given as real life assignments from the customer.
The benefit you have now is you don't have the barrier of trying to make money off your your clients, they are doing you a favor by modeling for you and you may even make some money by selling them extra prints.
I would say, I'm a student and I would like you to model for me and in exchange I'll give you a free print or two and here's my price list if you would like to purchase more.
